feat: add a model catalog and repository selection - #37

Settings now manages multiple OpenAI-compatible connections with encrypted keys and private/HTTP support. A repository selects which connections it may use and the default; the gateway routes the alias to that provider. Applying a selection writes the instance patch and restarts the workspace only while idle.
