Update React Native sample dependencies

What changes are you making?

Fourth draft layer of the dependency sweep, above #529. Updates the sample while preserving React Native 0.80.2, React/react-test-renderer 19.1.0, both native architectures, and existing deployment minimums.

• Pin react-native-config 1.6.1, Nitro Modules 0.35.6, and Navigation Native Stack 7.14.12; refresh native pods.
• Constrain Navigation Elements to 2.9.15, compatible with the retained Navigation Native 7.2.2. A broader resolution required a newer peer and was not retained.
• Keep Quick Crypto 1.0.9 and Screens 4.16.0. React 19.1.6 from Bump react from 19.1.0 to 19.1.6 #472 remains deferred: the embedded RN renderer expects React 19.1.0.

Validation

• Frozen installation with strict peer dependencies; module/sample typechecking and lint; module API/build/package snapshot checks.
• 137 JavaScript tests across nine suites; iOS and Android production JavaScript bundles with isolated Metro caches.
• Legacy and new architectures: 53 Swift tests each on iOS 26.2; Android 38 Debug and 38 Release unit tests each, plus ARM64 Debug APK builds.
• An iOS 17.5 test-bundle load failed on a missing PassKit SwiftUI symbol; the tests passed on the Xcode-matched 26.2 runtime. Neither result establishes iOS 17.5 runtime compatibility.
• Combined interactive device regression and minified Release validation are pending. No security probes were run for this layer.
