fix(deps): align @vitest/coverage-v8 with vitest v5

Fixes the test:coverage failures introduced by the vitest v5 upgrade: @vitest/coverage-v8 was still pinned at 4.1.11, so vitest 5 received a v4 coverage payload (Expected string coverage payload, received object). Bumped to 5.0.3 to match. Verified pnpm build:packages && pnpm test:all passes locally.
