Update AppVeyor for matching environment variable to TravisCI #103
This should be a simple task. TravisCI has different environment matrices to tests with the environment flags given. Simply implement them for AppVeyor.
Closing as no longer applicable: both Travis CI and AppVeyor were replaced by GitHub Actions in fcbf696. The single workflow runs the same three environment suites (WITH_REGRESSION, TEST_MONKEYPATCHES, ENCODING) on ubuntu-22.04 and windows-latest for Ruby 2.5, 2.6 and 2.7, plus macOS, so Windows already gets the matching environment variables this issue asked for. #184 removes the last Travis-only code that was left behind.
