Types target newer Node than runtime

Medium Severity

This bump moves @types/node from 24 to 26 while the repo still runs Node 24 (.node-version, Dockerfile) and publishes @sentry/roach with engines: >=24. @types/node majors follow Node majors, so typechecking will accept Node 26-only APIs that throw on the supported runtime.
