Updates every GitHub Actions workflow that checks out the repo to pin actions/checkout at commit df4cb1c (release v6.0.3) instead of 08eba0b (v4.3.0). The change is the same one-line swap repeated across CI, contract tests, release, and manual workflows (client, server, cmake, common, networking, sse, Redis/DynamoDB/OTel, hello-apps, lint, internal, release-please, and manual publish/release jobs).

No workflow logic, inputs, or job matrices change—only which checkout action version runs first in each job. Inline comments still link to the v4.3.0 release tag and were not updated in this diff.
