docs: bump Oracle to 8.1.0

Bumps the Oracle entry in guides/tooling.md to 8.1.0 and adds the link to the new Composable Security report.

Verified before editing:

• Tag 8.1.0 resolves to 032c228, the same commit the audit retest covered.
• The digest matches both Docker Hub's 8.1.0 tag and the Deployments section of the audit report.
• Last update date follows the existing convention of the GitHub release date (2026-09-08).

Note: this branch also carries the earlier docs: bump Oracle to 8.0.6 commit, which was committed locally but never pushed. It is kept so the v8.0.6 MixBytes audit link is not lost. Happy to rebase it out if it was held back deliberately.

The audit report link points at lidofinance/audits main, so it resolves once lidofinance/audits#204 is merged. security/audits.md is generated by npm run fetch-audits from that repo's main, so it is intentionally untouched here and should be regenerated after that merge.
