May want to reconsider the hard pins at some point (that part is taken care of by uv lock) but 🤷

I think the google-cloud once where explicitly pinned due to some issues with other versions. But I can't remember details. If that still applies I'd like to keep them pinned in the pyproject file, but gitpython and pyyaml could definitely be unpinned here.

I'll leave it for now, probably best only to change if there's genuine value to doing so
