react-native-worklets 0.12 requires React Native 0.83 or newer. React moves to 19.2.3 across the workspace and the two native packages pin the same React Native for local type-checking.

Upgrades the fishjam-chat example to Expo SDK 57 / React Native 0.86.3 / react-native-worklets 0.12.1, with React 19.2.3 across the workspace. No feature changes.
Why now: the camera effects integration that follows needs
